Preparation:
1. In a pan, dry roast the green chillies, garlic cloves, and peanuts over medium flame. Keep stirring in between so they don't burn and until they become slightly charred and fragrant.
2. As the chillies and garlic roast, chop up the fresh coriander and coriander stems. Reserve.
3. Allow the roasted chillies, garlic and peanuts to cool for a bit. Then pound them in a mortar pestle or food processor into a coarse paste. Taste with coarse salt and a squeeze of lime juice to give a tangy flavour.
4. In a pan heat a little oil, add paneer cubes, and let them brown up and crispy on the outside.
5. Add the prepared thecha into the cooked paneer. Toss them together lightly so that the paneer gets the spicy aroma mix tossed over it.
6. Sprinkle the fresh coriander and coriander stems over the dish. Finally, toss everything together and serve hot.
